From the total amount of water in food for growth bacteria just can use the chemically unbound water (active water). The parameter water activity (aw-value) apply as a magnitude for water used by microorganisms. For the microbiological shelf life of food not the total amount of water is decisive but the water activity.
Everybody who produces food, handles or deals with food has to guarantee (within own regulations: HACCP, ISO, etc.) that the aw-value of his products correspond with the demands and regulations.

aw-Kryometer AWK-40: aw-Value-Measuring Device for Fast and Highly Accurate Measurements. The aw-Kryometer is a highly accurate water activity measuring instrument for highest accuracy demands. The AWK-40 uses a completely new and patented method of measuring. It provides several outstanding advantages: high accuracy (up to +/-0.001 aw), high reproducibility (+/-0.0003 aw , high resolution (+/- 0.0001 aw) and short duration of measurements (from 5 to 20 minutes). The measuring range is between 0,8 and 1,0 aw specially attuned for the demands of meat and meat-products (or products with comparable aw-value). The device can measure temperature with a high accuracy (resolution: 0,01¡ÆC, 2 channels) temperature difference and with optional equipment relative air humidity (with psychrometer, "wet & dry bulb" technique), too. It provides several measuring and evaluation capabilities, such as: storing of measured values or measuring results, serial interface to a computer or a printer, etc. The device can be calibrated by means of calibrate solutions. Aquaspector AQS-31: An Instrument for Fast Determination of Water Activity
The Aquaspector uses a capacitive humiditysensor to measure the relativ humidity resp. the aw-value. A measurement takes about 8...35 minutes (depending on sample). Like other aw-measuring devices with capacitive sensor the Aquaspector should be calibrated repeatedly. Calibration can be done with calibration solution fast and easy. Accuracy: ¡¾0,02 aw or ¡¾0,3¡ÆC. Resolution: ¡¾0,001 aw and 0,1¡ÆC. Measuring range: 0,05 ... 0,99 aw or 0 ... 50¡ÆC. Accuracy can be raised by means of calibration solution. A built in serial interface and software for PC will be supplied with the device.
Aquaspector AQS-31-TC with temperature control The AQS-31-TC is based on the model AQS-31 but the measuring chamber can be set to a particular temperature. This is needful if the aw-value has to be determined at a specific temperature. The adjustable range is between 10¡Æ...35¡ÆC. Other technical data are the same as the AQS-31-TC.
This instrument is a good choice for measuring a big variety of products with high a also low aw-values.
AWMD-2: An Instrument for easy Determination of Water Activity
The AWMD is a small, stand-alone, digital measuring device for determine water activity and material moisture. In site of its small measures the aw value and the temperature can be easily read with high accuracy on the 3.5 digit liquid crystal display (LCD). Due to its small dimensions, easy usage, the well readable display this device is advantageous as well as in laboratory, in production or in quality control. The device has an advantageous price-performance ratio. The device consists of a small measuring chamber that accommodates a plastic shell for the material to be tested. In the same casing, are the capacitive humidity-sensor and the temperature sensor (Pt-100 thermometer) together with the required electronic circuitry. Accuracy: +/- 0.02 aw and +/- 0.3 oC. AWMD-10: Fast and simple Measuring instrument
The AWMD-10 is a small and handy instrument for determinatinon of water activity. A fan inside the instrument accelarates the equilibrium of humidity in the air and the sample so the measuring time is significantly reduced. The display shows the aw-value and the temperature. The instrument can be operated with or without PC-software. The software comes with the device and can be used for calibration and data storage on a PC via RS-232 interface.
